There is a phenomenon of submarine life that is difficult to explain unless you have lived it: serving a fine-dining-style meal while the submarine is rigged for what sailors call angles and dangles.
Most people imagine submarines as machines of steel, technology, and secrecy. Few think about the galley.
As a Culinary Specialist, your day begins long before the meal reaches the serving line. You spend twelve hours preparing food for more than 150 sailors. Every meal must be planned, prepared, served, and cleaned up. There is no room for disorder. You clean as you go because there is simply no other way to survive the pace. By the time the meal is ready, every surface is spotless, every pan is accounted for, and every detail has been handled.
Then you serve the meal, turn over the galley watch to the next cook, and hope—just maybe—you can get a couple of hours of rack time before doing it all again.
A Culinary Specialist is more than a cook.
We support the captain directly, whether that means making cinnamon rolls from scratch in the middle of the night, maintaining his stateroom, handling laundry, or ensuring every detail is squared away so he can focus on the mission. The job is built on service, professionalism, and trust.
At times, I was called to stand quietly outside the Commanding Officer's stateroom. No conversation. No questions. Just a disciplined presence—a silent reminder that the crew stood behind its commanding officer and the responsibilities he carried.
On a submarine, everything is about the mission.
Every minute. Every breath. Every decision.
Support the American warfighter.
Always.
The Commanding Officer of a U.S. submarine stands at the sharpest tip of the spear. Few people in the world carry greater responsibility. The decisions placed before him can affect the lives of his crew, the success of the mission, and every atom and molecule and second or minute is a matter of national security. And God Forbid the Necessity, end the lives of hundreds of millions of people and the end of civilization and life on this planet as we know it.
That level of responsibility earns respect.
And that brings me to Day 50 underway.
The meal was ready.
I left the galley and headed to the control room.
"Captain, sir, the meal is ready."
Or sometimes:
"Captain, will you be joining us for the meal?"
The captain looked up.
Then I noticed the control room.
Rigged for angles and dangles.
My stomach dropped.
I had completely forgotten the Plan of the Day.
This captain loved to make the boat dance.
My eyes went wide.
His eyes caught mine, and he saw the panic spreading across my face. For just a moment, the corner of his mouth turned upward in the slightest smile.
That smile told me everything.
I turned and sprinted back to the galley.
"Secure everything!"
For those who have never been aboard a submarine, angles and dangles refers to steep ascents, descents, and aggressive maneuvering that tests both the crew and the ship. The submarine can pitch up, pitch down, roll, and change depth rapidly, moving through the water with surprising grace and power.
When that happens, anything not properly secured becomes a projectile.
Pots slide.
Trays fly.
Food leaves the serving line.
Pans crash into bulkheads.
And God help the cook who left a chef's knife unsecured.
A knife tumbling through a moving submarine is not a kitchen tool. It is a weapon.
That is why knife discipline is taken seriously aboard submarines. It is also one of the fundamentals of professional cooking.
As the boat moved through the depths, everything that was not secured tried to find a new home. What had been a calm, orderly galley moments before threatened to become controlled chaos.
On a submarine, professionalism is measured long before anything goes wrong. It is measured by what has already been secured, cleaned, inspected, and prepared. When the boat suddenly starts dancing through the ocean, there is no time to get ready.
You either are ready, or you are not.
That day, somewhere deep beneath the sea, I received another reminder of that lesson.
